Description

This homemade fresh vegan ravioli is filled with roasted sweet potato and pumpkin and mixed with our own almond feta cheese. It's delicious, egg free and there isn't an equivalent in the supermarket. The filling is so tasty, you need only toss the cooked ravioli with a little vegan butter, vegan Parmesan and a pinch of nutmeg. Or you can serve with your favourite sauce. Serves two generously, or more people if a sauce is added. We of course make our own dough, roll out our own pasta sheets, place our own filling and stamp out our own ravioli on the kitchen bench, the night before we post out. Cooks in moments. Freezes perfectly. Contains approximately 15 ravioli. PLEASE NOTE THIS WILL NOT BE INCLUDED IN 5- OR 7-DAY MEAL PACKS

Ingredients
Pasta - Plain flour, semonlina flour, silken tofu, extra virgin coconut oil, salt, water.

Filling - sweet potato, pumpkin, almonds, olive oil, garlic, seasonings, lemon juice.

Free of added sulphites, free from artificial colours, flavours and preservatives.

Serving
Serves 2-4 - Portion contains approximately 15 ravioli.

Serving suggestion - Serve hot ravioli with a little melted vegan butter and a sprinkle of vegan parmesan and freshly-gound black pepper. Sprinkle some fresh, chopped herbs such as chives. Alternatively serve with ragù, bolognese, carbonara, arabiatta or another sauce of your choice.

Cooking Instructions
Cook from unfrozen -

Stove-Top Cook by placing ravioli into already boiling salted water, scooping the pasta out as it comes to the surface - 1 to 2 mins approximately. Drain well. Toss with olive oil to prevent sticking.

Storage
Store in the refrigerator at a temperature of 4 degrees or below until 'use by' date, or freeze immediately at a temperature of -18 degrees C or colder. Freeze for the correct period in accordance with your appliance (as the use by date refers only to refrigeration period) and defrost thoroughly before cooking.

Defrosting instructions - Ideally thaw package overnight in the refrigerator.
