Description

Black beans stand in for the traditional kidney beans here, for a nice change, and because they are so incredibly good for you, being full of iron, protein, magnesium, potassium, zinc, folic acid and dietary fibre. Oh, and there's some quinoa in here too, acting as a 'mince' of sorts, as well as a big ole bucket of veg. The result is a really healthy, hearty, flavourful chilli - not too spicy. If you are craving a good, nutritious feed, this is it. Perfect for when you are feeling delicate or unloved, or when you've had your impulse-purchase Lamborghini repossessed. That's always annoying. Great with some Nachos Cheezly grated on top.

Ingredients

Serving
Serves 2+. This chilli is mild to medium heat spicyness.....add chilli flakes or hot sauce for more heat.

Serving suggestion - serve with steamed rice, grated vegan cheese, soft flour tortillas and a salsa of chopped avocado, red onion, tomatoes and lemon or lime juice. Top with fresh coriander. Alternatively serve with corn chips or taco shells with toppings.

Cooking Instructions
Cook from unfrozen -

Microwave - empty contents into a microwave safe dish, cover lightly and heat on full power for between 2 and 5 minutes (depending on your microwave), checking and stirring once or twice. Microwave ovens vary. Check that the product is piping hot throughout before serving.

Stove-Top Empty contents into a saucepan, and heat gently on a medium burner, stirring occasionally, until product is piping hot throughout

Storage
Store in the refrigerator at a temperature of 4 degrees or below until 'use by' date, or freeze immediately at a temperature of -18 degrees C or colder. Freeze for the correct period in accordance with your appliance (as the use by date refers only to refrigeration period) and defrost thoroughly before cooking.

Defrosting instructions - Ideally thaw package overnight in the refrigerator. Also can be defrosted in the microwave on low or defrost setting, checking and stirring frequently. Heat immediately after defrosting. Do not re-freeze after defrosting.
